I shared Part I of “How I survive Paleo and Whole 30” HERE. It has been one of my most popular blog posts. I thought I would do a follow up post and share more of my favorite Paleo recipes and a couple are even Whole30 approved. I go on and off from eating a strict Paleo diet to eating about 90% Paleo. I recently started it up again and this is how I see the quickest changes and results in my body. From how my stomach feels, my self perception, to how I look on the outside.

These are some of my tried and true Paleo recipes…the recipes I share with all of my friends!

I love to make Protein Bites to have on hand instead of a store bought granola bar. I came up with the Protein Bite recipe below as a little treat or a pick me up when I am craving something sweet and need extra protein. I like these bites because they hold their shape well and can be packed for the day without “melting” or falling apart.

Almond Butter Coconut Protein Bites

First toast your Unsweetened Coconut at 325 degrees for about about 3 minutes or until golden brown.

Mix everything together. You can add more syrup if it isn’t sticking together.

That’s all! I store mine in the fridge and they stay good for several weeks.

You could add in some cocoa nibs or chopped nuts too!

Cauliflower Fried Rice

  • 1 Head of Cauliflower *shredded into “rice” (see instructions below)

You can really add any veggies you want to this recipe. This is what I did- (you can also buy a bag of frozen stir-fry veggies and use that!)

  • 1/2 Purple Onion, diced
  • 1 Yellow Pepper, diced
  • 1 Orange Pepper, diced
  • 2 cups Broccoli, cut into florets
  • 1 cup Carrots, sliced thinly
  • 1/2 cup Peas

You can also add any meat or no meat at all! This is what I did-

  • 1 cup diced cooked Ham
  • 4 pieces of cooked Bacon
  • 4 scrambled Eggs

Sauce-

To keep everything from getting all mushy and too blended together I sautéeverything separately.

First onions to flavor the pan. You could sauté the peppers, carrots, broccoli all at the same time until just soft, you don’t want to cook them too long. Take all of that out of the pan.

Cook your bacon, take out of the pan and drain the fat. Brown the ham and take out of the pan. Scramble your eggs and take out of the pan.

Then sauté your cauliflower with half of the sauce. Once the cauliflower is softened stir everything else back in your pan with the peas and the rest of the sauce. Cook long enough to heat everything back up.

This is the best recipe, everyone in our family loves. I love to have the leftovers for breakfast too!

I chop my cauliflower into chunks then I add it to THIS Food Processor to turn it into “rice”. (That food processor has been great and for the price I have been impressed). I have tried to turn the cauliflower into rice in my blender and it didn’t work as well- if that is all you have I suggest doing it in small batches. I have also seen the cauliflower grated over a cheese grater. OR you could take the easy way and look at your local store to see if they have cauliflower already turned to “rice” in their freezer section.

This non-dairy Paleo Ice-Cream saves my sweet tooth. I just need a little to hit the spot. Also my kids actually prefer it to a milk based Ice-Cream. You have to use frozen bananas or it will not work. So go peel those bananas and get them in the freezer stat!

Non- Dairy Paleo Ice-Cream

  • 4 Frozen Bananas
  • 1/2 cup Coconut Milk
  • 1 teaspoon Vanilla
  • 1/2 cup Frozen Fruit (I used about 4 strawberries)

Blend everything together in your blender and blend for about 3-4 minutes. You will have to stop a couple of times and scrape down the sides of the blender. Blend until it is all blended together (no fruit chunks) and looks like ice-cream.

You can eat it right away and it is like a soft serve ice-cream. Or put in the freezer for a couple of hours.

Try different varieties- always using the banana’s and coconut milk-
